Butternut Squash and Prawn Bisque

Serves 4 (or 2 if they are really hungry!)

Ingredients:

1 large butternut squash peeled, deseeded and chopped

400g potatoes peeled and chopped

2 cloves garlic finely chopped

500ml fish stock

1 tsp paprika

1-2 tsp sugar (optional)

Salt and pepper

180g cooked prawns

2 tbsp half fat crème fraiche

2 tbsp chopped parsely


Instructions:

1.   Briefly fry potatoes and garlic  (don’t burn the garlic!)

2.   Add butternut squash and cover with stock

3.   Add paprika and salt and pepper

4.   Simmer for 45-60 mins until squash starts to disintegrate

5.   Liquidise everything and return to pan

6.   Add sugar if using

7.   Add prawns (reserving a few) and cook for 5 mins

Add crème fraiche and parsley, mix and serve.  Garnish with the reserved prawns.
