Spaghetti, ham and eggs

A recipe my mother made when I was growing up, not sure where it came from!

Ingredients (Serves 2):
200g pasta
7 slices of smoked ham
1 onion chopped
1 clove garlic crushed
1 tin of chopped tomatoes
1 chicken stock cube/pot
1 bay leaf
4 tbsp chopped parsley
4 tbsp grated parmesan
2 eggs
2 tbsp olive oil
Salt and pepper
Instructions:
1. Fry onion in 1 tbsp olive oil, adding garlic once onion starts to brown.
2. Add tomatoes, bay leaf and stock and simmer gently.
3. Add pasta to boiling water and cook for 12 minutes.
4. Once pasta is cooked, drain.
5. To pasta pan add remaining olive oil and gently fry ham before adding drained pasta. Season with salt and pepper. Fry gently for 1-2 minutes.
6. Add parsley, parmesan and beaten eggs, and cook until eggs are set, stirring constantly.
To serve, place pasta on plate and pour over tomato sauce.
